veggie frittata




  • 1 tablespoon evoo
  • 2 tablespoons chopped onion
  • a few handfuls of chopped spinach
  • 1 chopped red pepper
  • 2 cloves of chopped garlic
  • a few handfuls of broccoli
  • shake of salt & pepper
  • 8 eggs


  • turn oven on to 350 degrees
  • steam broccoli
  • sauté onion & garlic in evoo for 3 minutes
  • add spinach, cook for 3 minutes
  • add red pepper, cook for 3 minutes
  • toss in broccoli & add a little salt & pepper
  • whisk 8 eggs in a bowl
  • pour veggie mix into casserole dish, pour eggs in & mix
  • put in oven for 35-40 minutes, until cooked through
