pumpkin almond butter dessert/bread

at the start of the year, we had a raw/paleo dessert & game night. my friend lex brought over a delicious pumpkin almond butter dessert. today, lex brought over the recipe for me. the original recipe can be found on this primal life blog. this blog follows the Primal Blueprint by Mark Sisson which is very similar to the Paleo Diet. this recipe has plenty of room to experiment. the first five ingredients are the base of the recipe and everything following I decided to try out. this recipe could easily be a bread or muffins with less honey or could turn into a cake with some frosting.

  • 1 cup almond butter
  • 1 egg
  • 1/3 cup honey
  • 3/4 cup pumpkin (i had canned leftover from the fall)
  • 1 tsp baking soda
  • 3/4 cup chopped hazelnuts
  • 1/2 tsp cardamom
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 tablespoon ground flaxseed
  • dark chocolate chip chunks (I didn’t want the whole pan to have these, so I just poured these on once the batter was in the baking pan)

  • Turn oven on to 350 degrees
  • Mix all ingredients well in a bowl
  • Pour batter into an 8×8 greased pan
  • Bake for 25-30 minutes
