banana bread


i had some over ripe bananas & thought that they would work well in place of the pumpkin in the pumpkin almond butter bread. this bread is delicious & simple! again, there’s plenty of room to experiment with this & add in spices, nuts, etc.


  • 1 cup almond butter
  • 3/4 cup mashed banana
  • 1 egg
  • 1/3 cup honey (feel free to use less depending on how sweet you want it)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tablespoon ground flaxseed
  • (optional: dark chocolate chip chunks)


  • Turn oven on to 350 degrees
  • Mix all ingredients well in a bowl
  • Pour batter into an 8×8 greased pan
  • Bake for 20-25 minutes & a toothpick comes out clean

another variation: topped with coconut flakes & sliced almonds

(this variation: pour batter into pan & bake for about 15 minutes, drizzle some agave over the top, add some coconut flakes & sliced almonds & bake for another 10 minutes)

    what do you use in place of flour? or don’t you need any?
    we want to be sure before we try it

    hi gayle! there’s no flour at all in this.. the almond butter works really well for the base of the batter. let me know if there’s anything else! :)
