chicken, brussel & parsley dinner

this dinner was a, what-is-in-the-fridge kinda dinner. we headed up to tendercrop farm on sunday and came back lots of BEAUTIFUL, colorful food! i’m not the best at planning out what i’m actually going to DO with the food i get.. this is what we ended up with for dinner tonight. very easy when you don’t exactly feel like cooking much.. and this is where you’ll see the cooking process at our house.. lindsay had the veggies & chicken going when i got home & had me work in some flavors.. add this, add that, taste/smell, add this herb, that spice.. wallah!

ingredients:

  • coconut oil
  • (leftover) grilled chicken
  • cubed brussel sprouts
  • chopped white onion
  • sliced green onion
  • chopped red cabbage
  • chopped fresh parsley
  • thyme
  • pepper

directions:

  • put a generous amount of coconut oil in a pan on the stove
  • add white onion, let cook for a little bit
  • add brussel sprouts & green onion, let flavors mix together
  • add in chicken
  • add red cabbage
  • add some fresh parsley & mix in
  • sprinkle some fresh pepper & thyme in
  • serve & finish with some fresh parsley
