camarones en salsa (salsa shrimp)


this delicious & flavorful dish comes from one of my faaaavooorites, mary helen. i get to see the lovely mary helen every day at work where we practice community eating :) aka what’s yours is mine & what’s mine is yours (you might even get someone at your desk with just a fork in hand & a hopeful eye…). today was a great day to be on the receiving end with mary’s shrimp dish. mary, having grown up in the dominican, has introduced me to lots of new delicious foods & ways to cook- plus, she’s a fellow creative cook- a little of this, a little of that. here’s mary’s first recipe here- many more to come ;)


  • 2 pounds of jumbo shrimp, deveined


  • 1-2 cloves of garlic
  • 1 tbs dried oregano leaves, crushed
  • 2 tbs bitter orange juice (alternative: lemon or lime juice)
  • sea salt & pepper

sauce ingredients:

  • olive oil
  • 1/4 cup of chopped onions
  • 1/2 cup of chopped red and green peppers
  • 1 chopped tomato


  • place shrimp in marinade for 20 minutes
  • put the sauce ingredients in a skillet on medium-high heat
  • sauté for 1 minute
  • add shrimp
  • lower the heat to medium
  • stir & cook until shrimp turn opaque
